Distinctively Peranakan, here are some favourites from the media tasting.
Ayam Buah Keluak (stuffed Indonesian black nut with chicken) is one of Chef Kenny’s signature dishes. A well-known Nyonya dish that is synonymous with Peranakan cuisine, the popular dish requires expertise and is extremely time consuming to prepare.
The flesh of the Buah Keluak, an Indonesian black nut, is painstakingly extracted, fried with chicken, prawns and rempah (pounded spices), and simmered in a rich gravy before it is placed in the empty nut shells.
Babi Pong Teh (braised pork in salted bean paste) is another staple in Peranakan food. The pork belly is braised for hours in salted bean paste gravy with a hint of cinnamon. It is rich and flavoursome, so tender that it melts in your mouth.
Itek Tim is duck soup simmered with salted vegetables, pig's foreleg, preserved sour plums and tomatoes. Sweet and sour, lovely home cook goodness.
Balance the richness of Peranakan food with Nyonya Chap Chye, a light vegetable stew and a home favourite.
Udang Lemak Nenas (Prawns with pineapples in coconut curry) is rich and flavoursome. Another time consuming dish to prepare as fresh coconut are used. Very lemak and sedap ! My favourite!
Ikan Goreng Cili (fried fish with sambal) is fried cod fish laced with Chef Chan’s special sambal chilli. The crunchy batter fish leaves you craving for more, the chili is to die for and a perfect condiment to add a fiery punch in every dish.
Telur Cincalok (fermented shrimp omelette) is loved by every Peranakan for the tangy taste with a hint of spice.
Nyonya Cendol - The cendol handmade by Chef Chan is soft and light green in colour unlike the acidic green commercial ones. I like mine with lots of Gula Melak , its very lemak and ultra sinful and oh so good !
